Hotel's New menu at The Atlantic
The Table Bay
Hotel's distinctive landmark eatery on the water's
edge, The Atlantic, has tweaked its cosmopolitan
menu with new winter flavours adding a new
dimension to its innovative gourmet cuisine. This
stylish restaurant at the luxurious Table Bay Hotel
has once again been selected as part of the
American Express Platinum Fine Dining Programme for
2003, which appraises restaurants for service
standards and gastronomic excellence and ensures
the discerning diner of an intangible edge to
exclusivity and individuality. Executive Chef Grant
Cullingworth has created a menu that applies fusion
where it is appropriate while maintaining the
exciting edge to fine dining for which The Atlantic
enjoys prominence.
Cullingworth has masterfully
created a new winter menu that is diverse and
imaginative, enhancing ingredients with subtlety to
whet the appetite. The
new menu is plump with unusual tastes and creative
combinations such as the Gorgonzola, Grilled Pear,
Smoked Chicken and Sweet Potato Gaufrette as
starter or the sensational Forest Mushroom and
Roast Garlic Tart Tatin.
If you prefer a more
comforting winter starter, try the sumptuous, fresh
Black Mussels steamed in Fennel and Ouzo Cream Nage
served with Garlic Bread. A definite winter must to
keep the chill at bay is the host of flavoursome
soups Cullingworth has added to the menu. A taste
for every palate, experiment with a Thai Green
Curry and Cauliflower soup with a hint of toasted
Coconut and smoked Butterfish or indulge in the
traditional thick Tomato and Winter Vegetable soup
with Cannaleni Beans and Basil Pesto.
The main courses offer a
feast for meat lovers. Try the roasted Beef Fillet
served with Gorgonzola and Pine Nut Butter, Port
poached Leeks, wild Mushroom Jus and Potato
Lattice. Or tuck into the more robust Red Wine
braised Oxtail, hearty Winter Vegetables, Chorizo
Sausage and Cannaleni Beans served with a
melt-in-the-mouth Garlic Mash.
If you prefer white meat,
wrap your taste buds round the tender five spiced
Duck Breast, Red Cabbage and Caraway Spring Roll,
crushed Potato and sautéed Green Beans with
an all South African Pinotage Jus.
Vegetarians also have plenty
to choose from with Polenta Corn and Gorgonzola
Tart, Portobello Mushroom, Honey spiced Butternut,
sautéed Bok Choy and Balsamic Cream or
Ravioli filled Spinach, Feta and Butternut,
Courgette Spaghetti, Barigoule sauce and Basil
pesto. Fresh from the Atlantic comes the baked Sole
in Almond and Polenta crust accompanied by a rich
Vine Tomato confit and Lemon Butter sauce or
pan-fried Monk Fish in Prosciutto served with Lime
and Basil Risotto and Red Wine and Caper
sauce.
A deliciously decadent
display of desserts rounds off this feast of
flavours. Enjoy the warm Pistachio Nut and Apple
Torte served with spiced Mascarpone and Calvados
sauce and Star Anise Ice-cream or the Banana and
Turkish Coffee Bavarois with Macadamia Nut
Brûleé, Coffee and Kahlua Anglaise and
Maple syrup. The
Atlantic restaurant also has a comprehensive wine
list catering for the novice and the connoisseur to
complete this wonderful meal.
The Atlantic Restaurant is
open from 19h00 to 22h30 for dinner. Secure

Three
of Sun International's collection of superb resorts
in sub-Saharan African were launched in 2001.
Linked by scheduled air services, the three
properties are among Sun International's premier

Below the Lost City and its
Valley of Waves, where surfing waves roll onto
powder white sands and visitors ride the water

Africa's first in-city Health Spa with its boutique

personal trainers and experts in holistic

As for doing business in
style, the international Business Centre's
conference room for 260 has state-of-the-art
equipment. There are also versatile reception areas
for up to 800 and an executive boardroom, all with
dramatic views of the ocean.
The third point of this
Golden Triangle, is the latest Sun International
venture situated on one of the most extraordinary
sites in the world, right at the lip of the famous
Victoria Falls in Zambia. It is the magnificent new
$55 million two hotel resort opened earlier this
year. The hotels are the five-star Royal
Livingstone and the three star Zambezi Sun,
mere metres from the lip of the famous
falls.
Part of the infrastructure
on the 46-hectare site, is an entertainment centre
and a convention facility to match the best in the

In referring to this resort
